Anyone have any idea how much a primary school caretaker earns and what their terms of employment are?

No idea of pay but I believe they are employees of the school directly and NOT the central government in the way teachers are - this has a significant bearing on terms and conditions like pensions.

GMIT in Galway had an advertisement for staff and that was 25k, well advertised at €480 per week

In a school on your own you may have more responsibility like locking up and alarms before you go home so maybe a bit more?
Oh and if you get a job, look after the oil tanks. Schools are having their tanks emptied all over Ireland. Sorry, bit offtopic but you can say this to show you are aware of new issues

As said, you work for the school not a government department so pensions are handled differently
