Yogurt production - where to learn the basics & get supplies ?

    I've been considering the mater of yogurt production to use up excess milk.

    Have any of you looked in to this ( or even better, are any of you actually doing it ? )

    Leaving aside the (elephant sized) issue of making sales, where can I find out what standards, approvals, registrations......are required ?
    Also, who are likely suppliers of plant and cultures ?
