Not sure how to word this properly so bear with me.

Me and my GF broke up last year, i moved out. At the start of this year my daughter was diagnosed with something and due to that, i stay in her house Saturday, Sunday and Monday nights to look after our daughter while my ex works. I am currently getting JSB, i was informed by the original person who took my application and my deciding officer to put down my Ex's address to receive my cheque, i explained our situation to each of them perfectly and both said that it wouldnt affect any payment my ex received or applied for.

She had an interview today with a deciding officer about one parent family, she was told that she couldnt get it as i was still living with her "on paper", the officer told her that she doesnt believe that we are living apart.

Is there anything that can be done?

Yes, change your address to the one you're living at... whoever told you to keep your address at your ex's was stupid... and I'd be making a complaint about it.

Then your ex can make an appeal.
