Hi all - I have half a jar of stem ginger sitting in the press that I really want to use (rather than throw out!). I found a recipe for ginger nut biscuits, so going to give these a try this evening. I was wondering if anyone else has any recipes/suggestions as to how I can use the remaining ginger? All suggestions…

In college we did a rhubarb posset with a stem ginger compote on top, went down quite well.

ice-cream? basically just chuck some in with a vanilla ice-cream recipe.

Delia Smith has a great Preserved Ginger Cake with Lemon Icing recipe. Made it before, it's very good. Not really a summer sweet, perhaps eschew the icing and serve it with lemon ice-cream/sorbet.
