I have been looking at Churches in Galway for a Wedding in October, they're all charging between 300-500 Euro to use the Church and use your own Priest, I'm assuming this covers the cost of the service also, alter boys girls etc... Anyone know?

As far as I know this would cover use of the church alone. If you use a church outside your parish then they can charge you for use of the church, you can ask their priest to do it, he does not have to as you are not his parishioner but he might, then you would pay a donation to the priest, the altar boys/girls and the sacristan.

If it is not your own parish this is possibly the charge just to use the church. On top of that most places ask for a donation of €150 for the priest, €50 for the sacristan and about €20 to each of the alter boys! Our parish were very open about these costs.

A lot of churches don't use alter boys for weddings any more, may just be priest and sacristan. As others have said if its not your parish its probably just the cost for the church.

We are being charged €200 for our church which to be honest doesn't seem that bad to me. We may give the priest some money after that and then tip the altar servers if there are any.

We got married in Galway and the church was 250. The local priest married us and neither of us had ever met him before, neither of us being from or living in Galway. There were no altar boys or anybody to tip. That was the price and it was the best money we paid on the day :D
