Normally the only time i travel with ryanair its just carry on luggage i have with me but this time its the whole family traveling with suitcases to be checked in.
My question is, do i check in on line as normal, or do i check in at the airport when we are checking in our luggage?

I've been overweight plenty of times and never charged. Just like everything else, it depends on who you're dealing with.
