2011 Cooking Club Week 22: Vanilla Butter CupCakes

    ok here this weeks recipe the ingredients make enough for 8 largeish cupcakes, im icing them at the end to say happy birthday :)

    Vanilla Butter Cupcake
    Ingredients

    150g self-raising flour
    90g softened butter( i used unsalted butter but the normal one works fine)
    1 teaspoon vanilla extract( tesco finest isnt too expensive and gives a lovely taste)
    110g caster sugar
    2 eggs
    2tablespoons milk
    To Ice
    Ready rolled icing( I used Dr oetker)
    Tubes of icing ( again Dr oetker)

    Method

    1.preheat the oven to 180, line your tin with papercases

    2. sift the flour into a bowl and add the other ingredients

    3. beat until a pale creamy yellow colour. I got better results with an electric whisk rather than a food processor. the mixture at the start looks as if it wont mix right but give it time.

    4. put about a tablespoon of the mixture in each case, it dosent matter if the top isnt level it will level out while it is cooking.

    5. cook for about 20 mins, check after 18 mins , i think when it comes to baking it really depends on your oven, some ovens may take a little longer.

    6. Leave to stand until cool.

    7. Heat some apricot jam in a saucepan over a low heat untill its melted, keep the jam on the low heat so it dosent start to solidify again

    7. Sprinkle some icing sugar on your counter and rolling pin so the icing dosent stick. Roll out your icing, im using a few colours to make it more birthday cake like.

    8. Spead some apricot jam over the top of each cupcake, a pastry brush is the easiest way.cover the top of each cupcake with the rolled out icing, being careful to smooth it out, work as quickly as you can because as your hands heat up the icing gets harder to work with.

    9. use the tubes of icing to write a message or make a design on the top of your cupcakes, I practiced on a sheet of baking paper first to get the technique right.
