Dip Chicken in Flour?

    Made a chicken casserole with drumsticks today.

    Recipe said to dip chicken drumstick in flour then fry them to brown.

    Why do I dip them in flour first. What difference does it make.

    Adds to the caramalisation process, which is where you get the flavour from. Also the gluten in the flour helps to thicken the sauce when you add the main liquid ingredient of the dish (Cream/stock/etc)

    as above posters said it will thicken the sauce and looks better, but if you dont want to use flour, which alot of people dont these days then you can make the caserole seperately and cook the drum sticks in olive oil at the highest heat in your oven and they should crispy up and turn golden brown as there is natural surgars in chicken. then just serve them on top of the casserole, who doesnt like crispy chicken:0)
