Do all immersions have a thermostate attached to them,my immersion heats the water so hot that it would almost burn you in the shower.

yes they should do.Maybe your stat has broken in the closed position and so wont stop heating the water when it reaches the set temp....

My immersion has a thermostat but when I have a shower soon after it cuts out I need to mix about 50/50 hot and cold so it seems like it's normal that the thermostat lets the water get to a pretty high temperature such that the hot water would be too hot to use by itself at least for a couple of hours.

The stat is normally set at 55o ish, hot enough to wash grease from plates, far to hot to wash/shower with unless mixed with cold, if your getting burnt i would question weather your shower mixer is thermostatic and if so, is the stat working.
