    An eggs benedict is a fantastic thing if you find yourself in a fancy eating house or hotel.

    Preference is for poached, especially with a few kippers, but scrambled, fried, boiled; they are all good

    I love eggs! Unfortunately OH is allergic so I can't eat them as often as I'd like, but my favourite is scrambled duck eggs, with smoked salmon and pea shoots on buttered toast. It's like crack. Delicious, delicious crack.

    poached and lightly fried, on a bed of aspargus, with some shaved parmesan on top.

    or fresh country eggs scrambled with smoked salmon and cracked black pepper on brown soda bread with the obligatory orange juice.

    Eggs Benedict is better without the hollandaise, IMO. It's wholly unnecessary as a perfectly poached egg should provide all the moisture and flavour you need. Why complicate such a beautiful thing?

    Also, why do people consider Eggs Benedict posh?

    I like scrambled, fried with a nicely runny yolk (only realised i like this in the past year) or poached (yummy)

    I'd imagine it is because not many people would put together a Hollandaise sauce after a night of pints. It's a difficult sauce to make, and so therefore people tend to have it when on holidays, having a breakfast out.

    It wouldn't be something I would consider making at home.
