Turbo Cider, tested recipes?

    Am about to start my second brew. First was mead which went down well, but I fermented it at too high temp (hotpress) which dropped the alcohol content (I think). Only used bread yeast though.

    This time I'm going for cider, turbo cider to be precise. Does anyone have any reliable recipes for it? I'll be brewing a 5l batch to start off with, needs as high an alcohol content as practical while retaining the taste.

    Any ideas? Should I ferment in the house or outside? What kind of yeast should I get?

    It's a bit lacking in bite, so I'm planning on picking up some malic acid tomorrow and adding a little to my current batch before bottling (I've left out the lemon juice on this batch).

    Malic acid is what gives apples their sourness. Using lemon juice gives it a more citrus taste which isn't right.

    Right, I followed the recipe and 5L of cider is brewing away nicely and it already at 8.5% aiming for 9.5% or more. About carbonation, can I use carbonation drops in cider? I dumped in twice as much honey as the OG was a bit low (1.052).

    Sure you could also try 'pressed apple juice' (superquinn usually has it)
    ...40ml per 500ml bottle

    Also splenda does the trick...

    or brew sugar if it's handy

    I meant to try some of that crystalised ginger last time with my cider but forgot as it worked a treat with kitbeer (coopers canadian blonde)

    I wouldn't bother with fancy juice for priming turbo cider.

    A 250 ml carton is grand for 5 litres.

    BTW, the Malic seems to have done the business. I bottled the latest batch last night and it was much apple-ier than previous batches.

    Hmmm, where can you get malic acid? My brew is only 5 days old, might dump in a bit while i have the chance.

    Home brew shop - http://mybeerandwine.ie/ are in Rathmines if you are in Dublin. If you have already added lemon juice you probably shouldn't add more acid to the batch - keep it for next time around.
