Am applying for a new job, am in my current job for the last 6 years, my job before that of 3 years was in a totally different field, just wondering who to give a reference if I don't want my current employers to find out I'm job hunting..

On you CV put References available on request where you'd normally put references.

Companies will only follow up on references as a final step before offering you a position so no need to include it on your CV.

On who to pick, even if it is a different field you former employer is a good reference. If nothing else it shows that you have maintained a good relationship with them.

you will generally be asked for 2 references. If you've only had 2 employers a possible option would be a second person from that first employer.

Is there someone at your manager's level who you could ask in confidence to give you a reference? That's what I did while leaving my last place, so by the time I resigned I didn't need to ask my manager for a reference.

If I worked for the company hiring you, I think I'd want to talk to someone from your current company. I wouldn't be happy with just a 3 year old reference from an unrelated job.

As above - Put References on Request at the end of your CV - you only ever need to give names of references when a potential offer is on the table.
