I've been able to get a quote on a 250 dragstar online easily enough for what i imagine is a reasonable price for a learner. But since then i've been leaning more towards a sports style bike because i think it will be easier to learn on and do a test on. However i'm looking and 400-600cc bikes and getting a restriction kit on them, which i'm finding it difficult to get a quote online for. does anyone know if there is much of a jump in insurance between say a 250 dragstar and a restricted zx6r for example??

    Thanks in advance!

It really depends on a few things, mainly age but also if you have undertaken any insurance certified lessons. They are like normal lessons except the instructor is marking to an insurance standard ( AON & Quinn do them). There are 4 grades but grade 4 being the lowest. Afaik you need a grade 2 to get insured on a 600cc sports even though it will be restricted.

One thing I have found is insurance company's love older more experienced riders

Unless the bike is factory restricted there's no distinction by the insurance companies. Look at a Bandit, Fazer, SV650, ER5 etc and you may get a decent quote.
