Pull, one stem/stalk at a time, peel it away sideways from the base rather than a straight pull up.

    What color are the stalks?

Hold it close to the base and pull or else the sticks will break.
    Make some custard and enjoy

Just don't eat the leaves. Boiling rhubarb is a great way to shine up saucepans. That Oxalic acid does give it a bit of a kick all right ( hope custard is an alkali !).
