Its the same as getting a .ie or .com domain. The only thing you should consider is the hosting. If its a NZ website and the main audience is NZ it would be better and more efficient to have the hosting set up in NZ, but the domain you can get anywhere.

But getting a .ie is much harder than getting a .com. Wheres getting a .co.uk is very straightfoward. It differs with countries. Thats why I was wondering about NZ, would it be hard get a domain like in Ireland or easy get one like in the UK?

    From http://dnc.org.nz/story/faq-registrants?m=324#whocanregister
Registrants need to be identifiable individuals over 18 years of age or properly constituted organisations. Registrants do not need to be based in New Zealand nor does their domain name need to be hosted in New Zealand.

So it looks like anyone can.

Anybody can register a .co.nz - you don't need to be from New Zealand or have any links to the country

What do you mean by harder? The only difference between getting a .ie and a .com address are the amount of domain registers who offer them. You are going to have more choice when it comes to buying a .com site as more domain companies offer it. There are still plenty of sites which offer .ie and .co.nz domains. This doesn't necessarily make it any harder.

Actually getting a .ie domain is a lot harder than getting a dot com, you have to prove that you have rights to own .ie domains, and your purchase of .ie domains has to be approved.

With a .com if it's available, you pretty much get it.
