If I win an auction and pay for the item via Paypal immediately, does the seller get my address, even if I'm not paying postage (picking it up in person)? E.

I think you can choose when it gets to the Paypal checkout.

Paypal will by default send your designated shipping address to teh seller. (unless you change it at point of sale)

The seller can also request your address and contact details from Ebay if they want.
