Sleepzone is a pretty nice hostel, I've stayed there before and its decent and cheap enough.

Also snoozles is a new hostel which opened up around a year ago, i've never stayed there but it looks nice from the outside!

Check the galway advertiser accommodation list too (you can view it online), maybe someone will let you rent a spare room short term
