Car repair values

I've a quick question if you don't mind? About two weeks ago I was involved in an accident where another car crashed into the side of mine (mines a 98 fiesta with 70,000 miles on the clock), and damaged the front passenger door, side panel and the back passenger door is also going to need some work. The other drier admits full liability.
The assessor came out Friday and wants to write the car off economically. However, as it's worth more to me as a means of transport than it's cash value, I'm sticking to my guns and I want it repaired. So the assessor has advised me to go to the insurance approved garage tomorrow for a quote to "see what they say". If they say the repairs are more than the car is worth, can I still stand my ground and demand repairs to a pre-crash state or will the insurance company only pay for repairs to a set value, possibly leaving me with an incomplete repair job?
    Thanks
