    When planting a tree would you use compost? Some say that if you do once the roots get to the end of the compost they stop growing. Should anything be added?

    You should dig a hole sevarl time larger than the tree's root-ball.
    Fill it with compost or well rotted manure,pop the tree in,backfill with more compost and water it in well.

    The compost is to get the roots off to a good start after which they'll be able to break through any soil as the tree gets stronger and larger.

    Compost is a soil conditioner/improver not soil replacement, fine for planting smaller plants but not trees. I would never use compost when planting a tree, soil is required to keep the tree firmly in place and depending on size of tree you may also require a tree stake for additional support against wind etc.
    If necessary, compost can be mixed in with the soil to improve texture, but compost on its on would be not be firm to offer protection against wind rock which is a major cause for new trees failing to develop.
