Saddle of Lamb

    Now I not really a fan of lamb, chops are over-rated but I do love a saddle of Lamb. I usually just stuff it and roast in the oven then serve with the two veg. Has anyone got any other recipe ideas for this flavour filled cut?

    I'm afraid that's the only way I do it myself. I suppose that because of the nature of the cut it really only lends itself to being stuffed. Maybe next time I get it I'll try doing something different with it.

    Possibly give it a North African twist by making a stuffing with mint, dried apricots, preserved lemons, etc. Then coat the lamb with harissa paste or a dry rub of ground coriander & cumin & a hint of paprika. Served with cous cous & roasted root veg coated in the same spices & a drizzle of honey.

    It isn't an expensive cut by any means.
    The person who wrote that article has a butcher who is taking the mick.

    I've done a little browsing and everywhere reckons that saddle is expensive. Given that it's the piece that include those dinky little loin chops that doesn't surprise me. They're an awful price!

    I'm wondering whether this query is actually about the breast of lamb, which is a cut very similar to pork belly, and just as delicious. In which case epigrams of lamb is a terrific recipe, and doesn't involve stuffing.
