Lemon Almond Cake

    Really nice cake.

    220g Ground Almonds
    50g Plain Flour
    200g Castor Sugar
    4 Eggs
    1/2 teaspoon of Almond Essence
    225g of really soft butter
    Zest and juice of two lemons

    Cream the sugar and the soft butter in the food processor. Mix the eggs in one at a time. Mix the flour and almond essence in. Mix the zest, lemon juice and almond essence in to make a nice smooth batter. Prep a spring cake tin (21 cm) and pour the batter in. Cook at 180 for around 50 mins.

    very handy. I had nearly all the ingredients in my kitchen. Didn't have any almond essence so threw in a handful of chopped almonds in to the mix and then another handful on top of the cake.

    Very easy to make, and it turned out grand. Just felt very ill after trying it.
    Something about the taste doesn't sit right with me, my mother thought the same.
    (generally I would love lemon / almond things, I make almond finger cakes a lot)
    However my dad loves it so more for him!

    Does anyone have a recipe for an almond and apple cake - I think it would be a nice combination but I can't find a decent recipe anywhere!

    Any ideas welcome!:confused:
