Have the iPhone nearly 6 months now and I only just discovered that if you double tap the middle button on the Apple headphones it skips to the next song, for me this is a major revelation.:o

What else am I missing out on I wonder?

I've tried this before and couldn't get it to work. There's the oul quick scroll a lot don't know about. Tap the top bar on most apps or webpages and it jumps straight to the top for you.

If you triple tap it, it goes to the previous song

Off the top of my head

Double tap home button when screen is locked to access iPod controls
Double tap home button to access multitasking, then swipe right to see iPod controls, a shortcut to iPod and an orientation lock button. On the iPad there is also a brightness slider.
Home and sleep button held together takes a screenshot
Double tap space while typing to add a full stop and space
Hold down skip track to fast forward or rewind
Hold down the the .com button to see other domain types (.ie etc..)
Long press on an image in safari to save it
Press and hold on compose new mail button to go to your last draft mail

Press and hold the shutter button in camera, and when ready to take photo, let go. My photos have improved a hell of a lot with this...;)

I only figured this out recently as well after a year of owning it.

If you're on shuffle mode, then shaking the phone will go to the next track (can be turned off in the iPod settings).

When receiving an incoming call, if you press one of the volume buttons at the side it mutes the ringtone. If you press the sleep button at the top, it hangs up.

There are a few free apps on the app store called something like iPhone tips and tricks and these will tell you all the little things.
