I thought you find find the following useful, amusing, and/or informative.

Penn State is offering a course in processing and prepping venison.

I am especially interested in identifying deer diseases as it is the one area with which I am not fully confident.

Anyone out there going to be along the State's East Coast (NYC) the weekend of September 17th?

Venison 101: Proper Processing and Preparation from Field to Table

Venison 101 is a one-day, intensive hands-on program designed for hunters who have an interest in expanding their knowledge of deer diseases, processing venison, and preparing delicious venison for friends and family.

The workshop begins with an evaluation of deer diseases (including Chronic Wasting Disease), followed by proper field dressing, an opportunity for hands-on processing, and cooking/canning demonstrations.

Cheers. I don't think I will make that one. But the wild deer soc held a carcus handling course near me in Cahir not so long ago.
It was very informative, they had a vet there to go threw reconising infection and what to do.
They then had an experienced game bucher there to go threw breaking mown the animal for freezing and food prep.
All told it was quiet good

    Tack,
PM me if/when you know your plans.

NYC is close to everything, not far at all.

Penn State is about 230 miles west of NYC. However, Route 80 is a major highway and it would not take long.

I really want to take this course. Sounds like fun. Could be a day trip, however, if any of ye lads were out here, it would be best to do an road trip. The Cabelas superstore in Harrisburg would be a nice return trip, a bit out of the way, but worth it.

    Slan.

Always wanted to check out Cabelas. Harrisburg must be free from radio-active substances by now:D I remember Dad was passing through it when it happened and said birds were falling from the sky:eek:
