old commercial gas cookers

    hi looked at this older model of a gas hob in a public house today.was few from 4 large gas bottles outside with a 3/4 galvanised main to the appliances.this had a pilot flame on it.can any one tell me what is the twisty yoke at the bottom,,,it was under the oven door and seemed to be connected to the device that was taking the pipework for the oven.it had a brass cap over it and if you got a grips on it you could twist it.........curiousity ????????????????????????????????????????
