    Hi all,
Am meeting the person who bought my wifes car this evening and we'll need to sign the log book (Vehicle registration cert) etc, and then ill post it.
the car is in my wifes name. do i need her to be there to sign it over or to sign it before i bring the car to the new owner as she is working this evening?
or can i get the new owner to sign it, then get the wife to sign it tonight/tomorrow before i post it to shannon?

If new owner agrees, then why not.
But he might be suspicious that you might want to scam him.

If he has filled in all his details and signed, then her not having signed makes no difference to him, a replacement log book would be needed to remove the evidence. If you were trying to scam him, you'd do your best to make him think everything is kosher.

OP - offer to photocopy the log book after he has signed it, you sign and date the photocopy stating you sold the car to him on this date for x amount. Get your wife to sign it when she comes home. If you have access to her passport or drivers licence, have that on hand to show them too.

If you can do that, that's better again. She doesn't have to sign it at the same time.
