I am looking to put on a bet in the near future and just wanted to enquire about e/w double/treble bets. In a hypothetical sense, if I picked 3 horses, selected the option of the treble but had the treble e/w, how exactly does that work? Do I get paid out if all horses place? Cheers

Yep. Its technicaly two bets: a win treble and a place treble.
If 3 win you get paid a win treble and a place treble.
If all 3 place you get paid place treble.
If two win a one places you still get paid as a place treble.
