I wrote a guide a while back for newbies to foreign satellite. Here it is http://www.boards.ie/vbulletin/showthread.php?t=2056097928
A lot of the big boxing fights are fta on the German satellites but in German. You are unlikely to the same amount of boxing as sky offers though.
As for ufc I have seen very little in the way if fights on foreign satellites.
But there is far more football available on foreign satellite than there is on sky. Which you can read about on the above link.

If you check out various foreign broadcasters such as Nova (Greece) on 13e Hotbird and Tring on 16e they are the main footy suppliers with 3.00pm Saturday kick offs. Not sure about boxing.
Trouble is you will need to go to some kind of supplier/reseller to get the cards for these as the broadcasters themselves will not supply you.
Nova is expensive at about €1200 per year. Tring around €300 per year. Nothing for nothing, as they say.
You will usually need a receiver with a CI slot to accept the broadcaster's cam and card. There are loads available
Any other method is illegal, and cannot be discussed on this forum.

edit: beaten by the above post as I typed!
