How far in advance is the best time to book flights, in this case to Orlando? I'm looking to travel in September. How close should I wait before I book?

You should be booking now. Aerlingus have their sale on for travel to 30th Sep. Leaving it longer risks higher prices. I travelled over in Sep last year and I booked it around March / April. By July the prices were almost double what I paid.

I agree, in my experience 6 months out is the best time to book. Aer Lingus have just extended their sale to September, so I would be booking asap, as they don't have unlimited seats at the sale price.

My general rule is, once you see a price you're happy with - book. Nothing worse than hanging on for a better price and missing the boat. I don't think you will do better than the AL sale, so i'd get booking if I were you!
