I've just been quoted €500 for replacing the brake caliper, disc, pad and a hose on one side of the front of a year 2000 323ci.

By all accounts the guy is good at what he does, but looking at parts prices across the web, I feel I could do better. I don't know his hourly rate. Can anyone tell me roughly if I can better a better deal on this?

    Thanks

Sounds about right when you include caliper and brake line or hose, incl labour.
Ring a few more places for quotes?

make sure you are comparing like for like.
hoses can be replaced singularly, pads are a set. discs should be replaced as a pair. caliper singularly.
caliper could be a spurious part or recon vs oe.

Yeah that sounds about right. He should be replacing the pads and discs on both sides to avoid an imbalance in the brakes so when you factor in the cost of the extra disc, the caliper, brake hose, and labour it seems reasonable enough.

    Cheap enough tbh.

Price looks fine to me. As said though disks and pads are never to be replaced on one side only.
