Just walking around the city will keep you in awe for hours. It's the most beautiful city I've ever visited. If you are flying in at night, the bus journey into the city gives you a overwhelming view of the castle and all the other old buildings up high over the city. I spent hours walking the city, one minute you are overlooking it, the next you are looking up at buildings on a height. It seems to be on many different levels.
Pubs are very friendly and alot of live music. Food is very good.
You could take a tour out to the highlands or loch ness.
If you want to stay in the city centre, the IBIS hotel on the Royal Mile is very convenient.

If you can hold off until August, I highly recommend the Edinburgh fringe festival. Absolutely loads to see and do then. Comedy, music, plays, shows every hour of the day and you can go to a load of shows free of charge.
I've been going for the past 5 years and always stay in student accommodation (Euro hostel). It's not the ritz but it's clean and the cheapest place during the festival and you will meet loads of people.

The city is only a 20-30 minute bus ride from the airport.
