aleoli or olioli Spanish food oil

    Hi Guys

    I'm trying to track down a food oil / dip that we came across in Spain.

    Excuse the spelling but it sounds like olioli or aleoli...

    Anyone got an idea what it is???

    Aioli? A garlic and oil sauce?
    It can be thickened up with an egg.
    I know in Italian 'aglio e olio' is garlic and olive oil.. But alot of people call the mixture an aioli sauce :) Pronounced "a-oh-lee" in English.

    Make mayonnaise from scratch, add crushed (manually not in a mincer) garlic = Aoili

    Garlic isn't a key ingredient in mayonnaise.

    If you said 'garlic mayonnaise' then yes, I would agree.

    But the OP states he was in Spain, so he more than likely had 'Allioli', Spain's take on the Provencal sauce. This sauce omits the egg so therefore, not resembling mayonnaise all that much.

    Classic Aoili doesn't have egg.
    It is just the garlic, olive oil and salt pounded/ground into a paste.

    Aïoli also doesn't have mustard, unlike mayonnaise.
