Try this crowd. They have a cork branch and will post immediately.I ordered some knives on their webpage and I received a call from them two days later to ask was I satisfied with my purchase?
I was very impressed. Try the victorinox or wenger .

Your local butcher will get you one off his supplier. I have done it for people in the past.

I have a few spare if yer stuck.

Victorinox, Dick, and a few others I can't remember the name of.
I have a good Butchers steel too. Makes a knife a good steel.

Thats the one, put in cctv there a couple of years ago and they seemed to have lots of different knives, steels, tenderisers, and lots more.

T, if you take the Tullamore road into mullingar, there is a golf shop and butcher shop at the Topaz station, just before the industrial estate. Sounds like it could be the one....

After 16 years boning beef and pulling one of these:

    http://www.scobiesdirect.com/ItemInfo.asp?ItemDesc=5%22+Boning+Knife+Black&ItemNo=VK5660312

I can throughly recommend it... the knife ... not the job...

the victorinox knives use a softer steel and take an edge really well.

The F. Dick knifes use a very hard steel and it's much harder to get an edge on them but they hold it longer.( Mc Donalds in Dublin do F. Dick)

Get yourself a really good steel and a diamond sharping stone, they have these stones in aldi at the moment, whilst not an actual stone they are very good, use it with a little WD 40 and remember 17 deg. ;):D

    hope this helps,

    Fish
