Substitute for Whipping cream

    I got a receipe for cheesecake which uses whipping cream and wondered if I could use Creme fraiche or something more low - fat instead??

    Yes, creme fraiche is a good substitute for whipping cream in cheesecakes, gives them a pleasant tang.

    Can I whip creme fraiche ???
    Also, someone suggested using Greek yogurt - any thoughts on that?

    Yes, provided it's at least 30% butterfat. Fat percentages for creme fraiche vary. Tesco and Yoplait brands have the right amount of fat for whipping. Bear in mind it won't be as firm as whipping or double cream, but it'll still work.

    You can't whip greek yoghurt, the fat % is too low. You could use it, however, your cheesecake will have a denser texture and won't taste as nice.

    Could you use evaporated milk? It is a little fiddly, but you can whisk it if need be.
