Flying into Stockholm in May, and have only booked a one way ticket.
Looking for ideas to go from there - Hopefully will have at least a week to travel then aim to fly back to Dublin from somewhere...
Any other interesting cities or towns in Sweden worth checking out?
Train to Copenhagen, then on somewhere else maybe?
Ferry to Helsinki - Anyone ever done it? 14hour trip it seems...

It depends on what you are interested in. Stockholm Central connects you to basically all of Sweden by bus or train. What you could do in Stockholm is "batluffa" around the archipelago. You can get a 5 day pass for 420 KR (about€50) which will allow you on all the boats these guys have.

Taking the boat to Finland is very common is Sweden and can be fun if there is a good crowd on the boat, but it could be boring if you are on your own. There are a couple of companies doing it and the Cruises are 24-48 h if i remember correctly. You can get tickets dirt cheap.

You should spend a couple of days in Stockholm if you have not been there before, it is beautiful. I am from Sweden so I am biased.

Tell me a bit more what you are interested in and I can help you more. Copenhagen by train is an option but it will eat a lot of your travel time, but if you are flying home from there it is deffo a place worth visiting.

Do visit Uppsala if only on a day trip.

Evenings will be pretty long in May, a boat trip of some sort, even a regular ferry to Turku in Finland can be pleasant.
