    I am interested in practical work more than sitting at a desk when applying for a job?

    I plan to send a few CV's out to a few companies hoping that there might be work in the pipeline.

    You could state this in your cover letter, but you should be open to accepting a desk job, especially if it is a company you want to work for. It could be your foot in the door and lead you getting more practical type work.

    I would be reluctant to provide any information that could be seen as a negative so early in the process. You want your CV to get you a meeting/interview.

    The meeting or interview is your chance to find out about more about a particular job & company and for them to find out more about you and your motivations. It's at this stage that you both decide if you're a good fit for each other. I would hold off until you get to interview stage and find out more about a job before going into that much detail about your preferences.

    You may have to slog it out at a desk for a while before you get the opportunity to get your teeth into the practical elements you are interested in, or you may have to do a combination of both. By all means tell the employer that is ideally where you see yourself.

    In any event, be open to compromise; unless you are self-employed (sometimes even then) it's rare to find a job that you love every aspect of.
