You can't
The Broadcaster decides the colour.

Pity - RTE1 is using colours that are so close to illegible they would be better off not there at all.

I've heard a few people already complaining that its easier to read the subtitles on the Analog as compared to the Digital, so its likely they mite change it before the official trial period ends...and Saorview to the amassed begins.
