Ain't no direct service between Ireland and Spain so you would have to go say Cork to Roscoff and overland down through France or you could go via the UK, plymouth to santander or portsmouth to bilbao I think it is and about 11 drive from there (if you're not dawdling along).
Have friends & family down there and I don't think it is the cheapest if you are bringing the car especially when you factor in juice but could be wrong.

    See http://www.ferries.co.uk/spain.html

www.seat61.com is your best resource for train journeys in Europe.

Your best bet initially would be to get a Sail Rail ticket to the UK. This only costs €40 see here for info

I would think that you'll end up having to go via Paris from any of the French Channel ports and then down. You can get decent fares on the TGV if you travel off-peak but AFAIK you can only book these 60 days in advance.

    This is from seat61
It's easy to travel from London to Malaga without flying. You simply take an afternoon Eurostar to Paris, the excellent overnight 'trainhotel' from Paris to Madrid, then a high-speed 'AVE' train through the mountains on the scenic high-speed line from Madrid to Malaga. Alternatively, if you'd prefer daytime travel with an overnight hotel in Barcelona, see here.

    Train times London ► Malaga
Travel from London to Madrid by Eurostar and the overnight trainhotel, as shown in the London to Madrid section. Then Easy transfer to Madrid Atocha station.

Travel from Madrid to Malaga by 186mph AVE train, leaving Madrid Atocha station at 11:35 and arriving Malaga at 14:07. The final section of new high-speed line from Cordoba to Malaga opened in December 2007, cutting Madrid-Malaga journey time to just 2 hours 40 minutes using the same high-speed AVE trains used between Madrid and Seville.

Change in Malaga for local trains to Torremolinos & Fuengirola or buses to Marbella, see below for details.

    Train times Malaga ► London
Travel from Malaga to Madrid by high-speed AVE train, leaving Malaga at 15:05 and arriving Madrid Atocha station at 17:40. Then transfer to Madrid Chamartin station. The new high-speed line from Cordoba to Malaga opened in December 2007, cutting Madrid-Malaga journey time to 2 hours 40 minutes by AVE train.

Travel from Madrid to London by trainhotel and Eurostar as shown in the London to Madrid section.

    How much does it cost?
    Fare from

    Madrid to Malaga

    by AVE:
Web fare 30 euros (£21) one-way in Turista.

Estrella fare 45 euros (£32) one-way in Turista, 68 euros (£48) in Preferente.

    Full fare £54 (76 euros) one-way, £86 (121 euros) return in Turista,

    £81 (113 euros) one-way, £129 (181 euros) in Preferente,

    £97 (136 euros) one-way, £156 (218 euros) in Club.

The Preferente & Club fares include a hot meal & wine.

you could get the overnight bus to London, then a bus/train down to plymouth and cross from there. On the otherside you could take a one-way rental to make your way down to Malaga. Enjoy your trip!
