Cycling the Grand Canal - ALL OF IT

Am thinking of cycling the grand canal all the way to the Shannon next Spring. Probably 2 days. Has anyone out there done this? Is it doable? I understand its a bit grassy in a few places - might go on the road if I have to for those bits. I'll be on a touring bike with 32mm tires. Ridertothesea_
