Olive Oil & Extra Virgin Olive Oil

    in terms cooking what's the difference between using olive oil and extra virgin olive oil?

    My amateur answer is that using extra virgin in cooking is a waste. Heat destroys the flavour. Using it in a salad dressing or such is one thing, but if heat's involved normal olive oil is perfectly fine imo.

    Extra virgin olive oil isn't filtered as much as standard olive so therefore it contains more solids. As a result of these extra solids, it is not advised to use extra virgin for cooking as the solids tend to burn. Plus it's a waste as there is more flavour in the extra virgin.

    I think EVOO has a lower smoke point, so it can't withstand pretty high temperatures.
