When sending iPhone to iPhone you can include emojis, there are plenty of apps in the app store that will enable them, don't pay for one though.

Otherwise you can enable the Japanese 10-key keypad and get some nice unicode stuff, but it's a bitch to find and ultimately not really worth it.

You can enable Smileys if you jailbreak. Use either "BiteSMS" or "iPhoneDelivery"
