    Hi,

    Say I am following 50 people and I have 7 people following me, if I tweet something at someone in particular i am following but they are not following me, will they see it on their profile?

    Nope, unless they search for a hash-tag you have incorporated.

    It will show under their mentions but if your profile is protected I don't think it will (correct me if I'm wrong!)
