I'm condsidering getting an iPhone and am living in France. I don't intend on jailbreaking it and I have 2 itunes accounts one for the Irish store and another for the French one.

If I pick one country do I have to stick with it or can I change as many times as I like. The reason I ask is because there are some good apps on the Irish store that I don't know if they are on the French one.

    Thanks in advance!

Both stores can be used on the same iTunes/computer, you just have to sign in/out between them. Once you keep everything on the same computer it is easy to sync it with the iPhone, regardless as to how many different country iTunes accounts you are using. The only potential inconvenience I've come across is updating the apps, you have to sign into each account separately to update any apps that you purchased from that account, but other than that I've had no problems with apps from the Irish, US and UK stores all working together on my iPhone, which is not jailbroken.

Does that same principal work for music bought from the iTunes store/stored on the 2 accounts?

Yep. The limit applies to how many units are authorised for each account, but there is no (current) limit as to how many accounts can authorise a unit to play its products.
