Windscreen foggin up since the cold snap!

Just wondering if anyone could help me out with some advice. A few days after the cold snap started my car froze solid and woudlnt start, not a kick out of it.

Anyways brought it to a garage, got it thawed out and had to get a new thermostat in it as the other one had cracked in the freeze. (350 euro ugh)

Since then the inside of my car window is fogging up non-stop, its like condesation on it the whole time. I got in today and there was ICE on the inside. At times its almost like there's steam coming from the A/C vents.
Turning the A/c on or off does nothing, opening windows does nothing, i have to constantly wipe it clear every minute or so and its a headwrecker.

So im wondering could it be something to do with this new thermostat or some other problem completely?
Does anyone have any advice or experience with something similar?
    Its a 04 petrol Vectra.
    Thanks for reading folks.

Have you checked the coolant level???

Could be a heater matrix leaking.

Whens the last time you changed the pollen filter?

Is there any flow coming from the air ducts or is it like a 2 year old blowing bubbles?? - how strong?

    So couple of fixes

    - Damp Pollen Filter , needs to be dried or replaced.
    - You have water pooling somewhere within the car, footwells / trunk which is warmed and recircled when you exit to form condensation
    - You external vents are blocked by leaves or snow or combination. You will most definitely need to clear this.
    - Also run the AC on warm and prior to existing the car run it on cold to settle the circulation of evaporated water.

If your stat froze, your antifreeze wasn't strong enough.
The expanding fluid will also crack other things like the heater matrix or possibly hoses feeding it.
I would second the heater matrix being borked.
