Beef or Lamb recipe for a large crowd?

    I've given this recipe to a number of people and they all loved it, and even passed it on to other people who also thought it was great:

    4tbsp olive oil
    2kg steak pieces cut into 2cm cubes
    2 onions, chopped
    170g diced pancetta
    4 garlic cloves, finely chopped
    2tbsp ground cumin
    4tbsp tomato puree
    11/2 – 2tbsp chilli powder totaste
    2 tsp dried oregano
    250ml red wine
    680g bottle passata
    2 tsp brown sugar
    750ml fresh beef stock, hot
    2 x 410g cans kidney beans, rinsed and drained
    Fresh flatleaf parsley, to garnish
    • Preheat the oven to 160o /fan140o /gas 3.
    • Heat half the oil in a large flameproof casserole over a high heat.
    • Add the beef and brown, in batches, for 5 mins. Remove with a slotted spoon and set aside.
    • Reduce the heat to medium and add the remaining oil, onions, pancetta and garlic.
    • Cool, stirring for 5 minutes.
    • Add the cumin, puree, chilli and oregano. Stir for 1 min.
    • Add the red wine, passata, sugar, stock and beef.
    • Season, bring to the boil and transfer to the oven, covered. Cook for 3 hours, stirring halfway, until the meat is tender.
    • Stir in the beans, then cook on the hob for 5 mins to heat through. Garnish with the parsley.
    • Make the chilli the day before up to step 2, then cool and chill add the beans when reheating

    Beef and Guinness stew is always a winner. So easy and delicious. If you want to make it seem more fun, do baked potatoes with a selection of flavoured butters(which you can make a day or two in advance)

    I'd recommend a dark ale or English porter or even a Dunkle Weiss over Guinness.
    If find that Guinness makes a very bitter stew.
    Even Beamish or Murphy's would be preferable.
