My Christmas day menu....so far

    This is the chritsmas menu so far

    Starter

    Salmon and ginger fish cakes with homemade sweet chilli sauce
    ( served with Jacobs Creek reserve chardonnay )

    Sorbet


    Lime and Blackberry


    Main

    Marafat peas
    Buttered carrots
    Bread sauce
    Turkey
    Sausage stuffing
    Honey glazed ham
    Mashed potato
    Roast potato
    Cream and shallot gratin
    Gravey
    ( served with Oyster Bay Sauvigon Blanc )


    Desert

    Homemade Christmas pudding and cinnamon & brandy custard
    ( served with Brown Brothers Orange Muscat & Flora Desert wine )

    I'm not doing much on Christmas day. Do you need someone to come around and, you know, make up the numbers?

    Sounds good, change your wines though - the heavily advertised ones are the quality of an 8euro bottle in tesco. In fact speaking of tesco I'd recommend their Gavi, I think it would work with both starter and mains and its on offer at 6e a bottle.

    Ok so the sorbet, sorry for the delay i had a crazy busy weekend.

    For it you'll need

    3/4 cup sugar
    3/4 cup water
    4 cups blackberries, fresh or frozen
    Juice of 3 limes and some of the zest as well.


    Bring the water to the boil and add the suger to it bit by bit until it is disolved. leave it to one side to cool.

    I then puree the blackberries in a processer and add the lime juice. Pass throught a strainer and add the lime juice and some zest to the it.

    Then when the sugar and water are disolved add in the fruit mixture and stir well.

    Ok what you do next depends on if you have an ice cream maker or not.

    If you have add the sorbet mix to it and churn for about 25 min and then tranfer to a tub and pop in the freezer for 6 to 8 hrs.

    If you haven't a mixer just pop and a tub and put in the freezer but check once an hr for the first few hrs and break it up to stop crystals forming.

    Then scoop put and serve after it has set !
