Making hot chocolate from scratch?

    Hi all,

    Can someone tell me how to make hot chocolate from scratch?

    I remember seeing a recipe ages ago using dairy milk choc, sugar and milk.

    But not sure exactly how to make it.

    Use about half a standard bar of dairy milk per cup of milk. Break up the chocolate put in a saucepan (with a think base if you have it), put in milk. Put on a low heat, stirring until chocolate is melted, then you can increase the heat a bit until it's hot enough for you to drink. Add sugar at the end to make it as sweet as you like it.

    tips:
    Grate the chocolate -speeds up the process.
    Use a whisk -getting air into the mixture enhances the taste and texture.
    Use higher quality chocolate than dairy milk. If you must use milk rather than dark at least use the best milk chocolate you can get your hands on (the more % cocoa the better, generally speaking).
