    I hi looking every where on this Course Apple Certified Technical Coordinator
    within Cork i am also looking for more Apple Course to do to build up my CV.

    You can do a search for when/where it is available by clicking on "schedule" in the above link or here. It seems to be two courses combined, so if you can't find it maybe try looking for each part separately.

    AFAIK Apple dont do any training on OS or Hardware in this country. Some private companies are Apple approved for training but mainly do the Pro Apps stuff ( Logic, Final cut, Aperture ). I will PM you with a contact I have in Apple who may be able to help. This is the Apple training Matrix but they are not all available in Ireland ( Demand?).
