There's Froebel and Marino too(though Froebel will be in Maynooth soon)

As far as I know Irish is mandatory, but could be wrong.

Below are the entry requirements for B.Ed degrees.
B.Ed. Entry requirements on mature grounds
Mature B.Ed. applicants applying on mature grounds are required to have a Leaving
Certificate (or an approved equivalent) with a minimum of a Grade C3 in three
Higher Level subjects and Grade D3 in three other subjects. Essential subjects include
a Grade C3 in Honours Irish, a C3 in Ordinary level English or a D3 in Honours
English and a D3 in Ordinary or Higher level Mathematics. Mature applicants may
combine Leaving Certificates to satisfy these requirements. Where mature B.Ed.
applicants are due to re-sit Leaving Certificate subjects in order to qualify for mature
entry, they may apply for a place in the same year.

Acceptable alternatives for Irish, English or Mathematics
A pass in a University First Arts Examination in Irish, English or Mathematics will be
accepted in lieu of the Leaving Certificate Examination/GCE/GCSE requirement for
that particular subject. In the case of Irish, a Grade C in the Matriculation Examination
(which existed up to 1992) will also be accepted in lieu of the Leaving Certificate
Examination/GCE/GCSE requirement. In addition, the Dioplóma sa Ghaeilge from
NUI Maynooth, the Diploma in Arts (Applied Irish) from University College Cork, the
Dioplóma sa Ghaeilge Fheidhmeach from UCD, the Dioplóma sa Ghaeilge, Level C1,
NUIG and the Diploma in Irish, University of Ulster are acceptable. In the case of
Mathematics only, a pass in that subject in the Matriculation Examination
(discontinued) will also be accepted in lieu of the Leaving Certificate
    Examination/GCSE requirement.

    The teacher training colleges are:
    St Pats Drumcondra
Froebel, (will be part of Maynooth within next 3 years)
Church of Ireland College of Education
    Mary Immaculate College Limerick
    Marino Institute (Colaiste Mhuire, Marino).

The entry requirement are pretty standard across them all.
