Say if someone had paid the deposit for a hotel to host their wedding and then went for the food tasting but the food was crap.
Would they be entitled to get the deposit back if they decided to go to a different venue?
Contract has been signed but if the food is not up to an expected standard is this a way out of the contract?

I sure think your stuck. A contact is a contact and there is no provision for cancelation based on the food in any wedding T&C's ive seen.

Did you speak to the hotel about the food after the tasting ?

Can I ask, did you eat in their restaurant before booking them?
If you did, insist on the same level of food.
    If you didn't, tut, tut!

I consider the food to be very important and would do my level best to try and get my money back on the grounds that their food is sub standard and would ruin my wedding day.
    No harm in trying anyway.

If that doesn't work, think about catering.

We had lunch there once beforehand and it was only ok. Figured the Dinner Menu would be a higher standard.
    Shouldn't make assumptions I know.

The thing is in the contract it states that until the deposit is paid in full that the hotel doesn't consider the booking final. We were paying the deposit in in 4 installments and have only paid 3. Could that be interpreted as not being a final booking and mean we are entitled to the full deposit back?

We did and they said we could try different food. They stood by the quality and insisted everything was freshly made which is not true. Various parts of the meal were quite obviously cooked from frozen.
