i am trying to update my wife's iTouch software - but everytime i press update, the whole thing hangs when it is performing the backup, even though there is only about 2gb on it...there is about 14gb free. it just backups for hours....if i cancel the backup, the whole update process stops, is there an option to skip the backup and just update the actual software???

search for the ipod firmware online and download it, press the shift key and click update
it will ask ya to specify where the ipsw is, click on it and let it update

Are you on the latest version of iTunes? Backup times have drastically improved with iTunes 10.

You're probably better off restoring it anyway. If you have the firmware downloaded hold shift and press restore, otherwise just press restore.
